Does cascade trigger if spell is countered?

Cascade is a triggered ability that triggers when the spell is cast, it is not part of the spell itself. Abilities are independent of their sources once on the stack so even if the spell is countered the cascade is still there.

How does adventure work with Cascade?

Cascade looks for a card with a particular CMC. For this purpose, you have to look at the Creature side, since that’s the only thing that exists at that point. However, if you find an applicable Creature that has an adventure you want to cast when you get that far, you’re free to do so (even if it’s not less!).
